What mung beans are

Mung beans (Vigna radiata), also known as green gram or moong, are the small, cylindrical seeds of a warm-season legume. The seed coat is usually green, either shiny or dull depending on the variety, and the inside is yellow. Mung beans typically contain about 22–26% protein on a dry basis and are easy to digest and quick to cook. Because they germinate readily, mung beans are the most common bean used for sprouts.

Grades of mung beans

Sprouting grade
The highest grade: uniform, sound beans with a high germination rate and very low levels of hard seeds and defects.
Cooking grade
Sound beans of good colour for whole cooking, soups, desserts and retail packing.
Processing grade
Beans for splitting into moong dal, milling into flour or extracting starch for noodles.
Shiny and dull green
Seed coat appearance depends on the variety; preferences differ by destination market.

Main uses and markets

In South Asia mung beans are eaten whole or as split, dehulled moong dal. In China and Southeast Asia they are used for bean sprouts, sweet soups and pastes, and their starch is the classic raw material for glass (cellophane) noodles. Sprouting-grade beans also go to markets in Europe, North America and Japan. India is the largest producer and also an importer. Major exporting countries include Myanmar, China, Australia, and several East African and Central Asian producers.

Packaging and logistics

Mung beans are usually shipped in 25–50 kg bags or big bags in containers; larger processing lots can move in bulk. Transport is by sea, rail or multimodal routes. Sprouting-grade beans are handled and stored to preserve germination.
