What sugar is

Commercial sugar is sucrose extracted from sugar cane or sugar beet. Refined white sugar from either source is chemically the same product; the difference lies in the raw material and the processing route. Raw cane sugar is produced at cane mills and shipped mainly to refineries.

ICUMSA colour explained

ICUMSA (International Commission for Uniform Methods of Sugar Analysis) sets the methods of sugar analysis. ICUMSA colour is measured by the light absorbance of a filtered sugar solution at 420 nm and expressed in ICUMSA units (IU): the lower the number, the whiter the sugar. Refined white sugar is typically ICUMSA 45 or below, while raw cane sugar is typically in the range of 600–1,200 IU.

Types of sugar

Raw cane sugar (VHP)
Light-brown crystals, ICUMSA 600–1,200, for refining. VHP (very high polarisation) is the main traded raw grade.
White refined sugar ICUMSA 45
White, free-flowing crystalline sugar for the food and beverage industries and for retail repacking.
White beet sugar
White sugar refined from sugar beet in temperate regions. Colour and other parameters are fixed in the contract.

Main uses and markets

Raw cane sugar is bought mainly by destination refineries. White sugar is used by beverage, confectionery, bakery, dairy and food industries and repacked for retail. Major cane sugar exporters include Brazil, Thailand, India and Australia; beet sugar is produced mainly in Europe, Russia, Ukraine and the United States.

Packaging and logistics

Raw sugar is shipped mainly in bulk. White sugar is typically packed in 50 kg polypropylene bags with a polyethylene liner or in big bags, shipped by sea, rail or multimodal routes.

Frequently asked questions

What does ICUMSA 45 mean?

It means a sugar colour of no more than 45 ICUMSA units, measured by the ICUMSA method. ICUMSA 45 is the common designation for high-quality refined white sugar.

What is the difference between raw and refined sugar?

Raw cane sugar still contains some molasses, giving a light-brown colour of roughly 600–1,200 IU; it is an intermediate product for refineries. Refined sugar has been purified to white crystals of ICUMSA 45 or below.

Which HS code applies to sugar?

Cane or beet sugar falls under HS heading 1701: raw cane sugar under 1701 14, raw beet sugar under 1701 12 and refined white sugar under 1701 99. The final classification of a lot is confirmed by the customs declarant.
