What pigeon peas are

Pigeon peas (Cajanus cajan), also called toor, tur, arhar or red gram, are the seeds of a drought-tolerant tropical legume shrub. The round seeds are usually cream, light brown or reddish, sometimes mottled, and have a yellow inside. Pigeon peas typically contain about 20–24% protein on a dry basis. Most of the internationally traded crop is whole dried peas, which are dehulled and split at destination into toor dal.

Types of pigeon peas

Whole pigeon peas
Whole dried seeds with the seed coat, the main form in international trade and the raw material for dal mills.
Toor dal
Dehulled, split pigeon peas, the yellow dal widely used in Indian cooking.
Origin types
Lots differ by seed colour and size; buyers often specify the growing area, such as Myanmar "lemon" tur or East African types.
Dal milling quality
Dal recovery and seed uniformity are key commercial points for mills.

Main uses and markets

India is the largest producer and consumer of pigeon peas and imports whole peas to supplement its own crop; most are processed into toor dal for sambar and everyday dal dishes. Pigeon peas are also eaten in the Caribbean, Latin America and Africa. Major exporting countries include Myanmar and East and Southern African producers such as Tanzania, Malawi and Mozambique.

Packaging and logistics

Whole pigeon peas are shipped in 25–50 kg bags or big bags in containers, or in bulk, by sea, rail or multimodal routes. Because harvest timing differs between Asian and African origins, shipments can be planned across the year.
